The Union of Cooperatives Les Fermiers Basco-Béarnais was created in 1983. Today it gathers about fifty farms where cheeses are still made according to the centuries-old shepherds’ know-how, and matured in collective ripening plants.
Our AOP-certified Ossau-Iraty sheep cheese offers all the characteristics of this beautiful legacy : made from raw milk, it is produced on the farm and matured for at least 6 months. Under its natural rind, its ivory-coloured paste will melt on your tongue with wonderful complexity !
